Early word filtering back from those lucky enough to get in to the Hoku's preview dinner. Chef Wayne Hirabayashi has redone the menu and the restaurant has gotten a facelift with new flatware, new floors, new uniforms for staff. Initial reaction I am hearing is...is that it? Hoku's was great when it opened over a decade ago and we'd walk across burning coals for his ahi three ways or his osso bucco. But its seems the restaurant has pretty much coasted in recent years, trapped in an aging menu by unseen forces. We've had some service there that was not up to par (45-minute wait for desert with a small child..no, no, no!). We're eager to get in there and take a look at the changes first-hand. I know that Chef Wayne is amazingly talented and hopefully my early reports are wrong.
