Honeymoon Helper: North Shore of Kauai in February?

It's Honeymoon Helper time at Hawaiirama. Each week, we're going to try to save one and possibly a few more honeymoons with timely advice on Hawaii travel with regard to honeymoons. Truth be told, we only got one question in, which is fine -- we've only published for a week. Ask and yee shall receive! Sally: I love the North Shore of Kauai. It's my favorite place in Hawaii and I wanted to have my wedding and honeymoon there. We were planning to do both in February 2007 as that's when my brother-in-law is free to travel. Is February a good time?
Hawaiirama: Basically, no. The North Shore is a verdant, green paradise. It's also quite tropical and rainy, particularly during the month of February. Not that this hurts the waterfalls or the surfing. But for a honeymoon and wedding, you are definitely rolling the dice scheduling on the North Shore at that time. If you must do it, make sure you have, at the very least, a covered venue and book somewhere up the hill in Princeville as opposed to down the hill in Hanalei where periodic flooding can shut down the highway and the quaint one-lane bridges. From a 2005 NYT article that is pretty right-on.
"The North Shore is an exquisite deep green because of abundant rain - sometimes very abundant. (Kauai's South Side, where many of the island's tourists stay, has drier weather.) Visitors and locals alike are periodically trapped on their sides of the Hanalei River when the bridge that spans it closes from flooding. It can rain 10 days in a row and make you rent videos."
Alternatively, shift those honeymoon plans to the South Shore, where sunny Poipu rarely gets much rain regardless of the season. Poipu is more crowded, with lots of condos. But its still pretty impressive and you can easily get away from it all at some of the undeveloped beaches. If you are heart-set on the North Shore, shoot for a traditional June wedding when the rains are mostly gone. That's our two-cents.

My husband and I are spending Dec 1-7 in Kauai for our honeymoon. We plan to stay on South Shore most of the time, but want to do one night on the North Shore, as it sounds beautiful!
Here’s my question: what are the things we absolutely cannot miss that are still worth checking out at this time of year.
My husband would probably just love to watch people surfing, if there’s a good beach for that. Or any great beaches for walking? (Know that swimming is pretty much out of the question).
Also, at this time of year is there an area on the North Shore that is better to stay? We just want to make sure to make the most of our short time there.
