Hawaii Restaurant News Flash: Chef Mavro Kicks It Up A Notch

Well, I guess it had to happen. After successfully running his posh, pint-sized eatery in Moiliili for a number of years, James Beard Award Winner Chef George Mavrothalassitis finally took the big step up and announced today that he'll soon open a casual upscale place taking over the space from Palominos, a formerly hip but quickly fading semi-highbrow downtown happy hour mainstay. Can the chef run two kitchens -- including a really massive one at Palomino -- and maintain quality? I'd say, for sure. He formerly ran the whole food services shebang at the Halekulani, which was evern more work. Personally, I can't wait to see what Mavro does with a wood-fired oven (am hoping he keeps the holdover from Palomino) and a full-bar (woo-hoo!). We'll keep you posted via his lovely wife and publicist Donna Jung (yes, am angling for a spot at the opening, for the sake of full disclosure).

For sure he can handle two joints. As you know from your NYC days, many chefs there known for their haute establishments have branched out with more casual venues, notably Mario Batali with Babbo, Lupa and Otto. Vive le Mavro!

I agree he can handle two but I think it might be a transition b/c casual is NOT how I’d describe the food prep at Mavro. It’s among the most intricate and involved I’ve ever seen anywhere, including NYC.
