Tropical Cocktail Signature Drink of the Week, Two Weeks Late

KonaTai.JPGThe Shipwreck Bar at the old school nouveau castaway Kona Village Hotel is one of those iconic resort boites so rare in Hawaii. It actually has history and yes, it really was made from a wrecked ship. The barkeep, Sid Kono, took the tap from his dad and many of the recipes are family creations. Here Sid steals a march on the Mai Tai standard-bearer, the Halekulani, with a fabulous rendition of Hawaii's tropical fantastical, dubbed the Kona Tai. This one is best to try early in the evening before Polynesian Paralysis sets in.

Kona Tai

*Fill 14 oz glass with ice

*Add

1/4 oz Bacardi Light Rum
1/4 oz Bacardi Dark Rum
1/4 oz Orange Curacao
3 oz pineapple juice
2 oz sweet sour

*Add a fresh lime wedge

*Mix all the ingredients above.

*Then:

Float 1/4 oz Dark Rum Coruba or Meyers
Float 1 oz Cabernet Sauvignon for beautiful color
