Chef Ogasawara: Sushi 101, Tweet by Tweet
In Hawaii, sushi we get. Lots of really, really good sushi. Partly comes from super fresh fish. Also comes from the nifty mixing of East and West. We’ll be featuring lots of beautiful imagery of sushi that you just can’t find anywhere else, really. So here’s an offering from @chefogasawara, one of the top sushi chefs in the islands and a prolific font of visual sushi knowlegde. Featured here “Kyuri Maki, Cucumber, Local Tuna, Hamachi, Sake, Jap. Pesto, Yuzu Soy, Shaved Maui Onions.” A gorgeous presentation, a nice mix of local seafood, zippy seasonings, and, of course, Maui onions. Chef Ogasawara is a chef de cuisine at the luxe Fairmont Orchid in posh Mauna Lani where he runs the sushi tasting menu, among other tasks, at Norio’s Japanese Restaurant. Hit him up for some original creations and a one-of-a-kind tasting menu. He’s up for it.
