Mango Madness with an Ehukai: Friday Hawaii Cocktails:
Friday means end of work week and time to kickback. We’re continuing with our drink menus from Tim Rita, mixologist extraordinaire at the Halekulani Hotel in Waikiki. Here’s the first of a flight (as in three) tiplers themed on the Tin Man Triathlon, a fun mini-style race in Honolulu that nods to the Iron Man (well, sorta). This cocktail *might* be hard to source well, but Tim is relying on access to amazing ingredients. Where necessary, substitute our for easier to find things (like normal mango). And come see TIm at the Halekulani to get a live one, fo’ sure.
“Ehukai” – Hawaiian translation is ‘red tinged water.’ So this one is the drink you slug after your swimming leg (assuming you have a really good bar cart on the beach).
1.5 oz. Kai Coconut Pandan (flavored vodka)
.75 Pama
4 pieces of Red mangos or (Rotui Mango)
2 basil leaves
1 oz. Fresh Lime and simple
1 oz. Cream
Muddle mango and basil.
Add ingredients.
Shake and double strain into martini glass.
Garnish with a surfboard shaped mango skin or orange peel.
