Tim Rita is the chief barkeep / mixologist at the Halekulani, a posh hotel also known for its extraordinary cocktails. (Cocktail guru Dale DeGroff was previously the in house mixologist). Tim is a playful kinda guy and feels compelled to create whimsical seasonal cocktails in the spirt of what moves him and, frankly, what moves us. So this summer’s Halekulani cocktails are themed on sports and titled “The Spirt of the Athlete.” Here’s the first concoction from this series, the Winner’s Cup. Sez Tim: “This drink is infused with energy for post race apres sprint refreshment.” Indeed. Here’s the recipe (with flames!). Available through July 31 (although if you ask nicely, they will probably make it for you after that).

1.5 oz Bacardi Superior Rum
.75 oz Disaronno Amaretto
1 oz pineapple juice
1 oz simple syrup

Pour contents into martini glass.
Float with sparkling wine.
Have lighter handy.
Flame an orange peel above the glass then garnish with flaming peel.
